What will you learn?

This QQI Level 5 programme introduces you to the craft and science of bread-making, viennoiserie, and patisserie. You will learn to produce a wide range of products — from sourdough loaves and enriched doughs to croissants, tarts, and celebration cakes — using both traditional and contemporary techniques. Practical sessions in college bakery kitchens form the heart of your week, alongside theory covering food science, nutrition, and food safety legislation. You will develop skills in chocolate work, sugar craft, and cake decoration. Most programmes include a work placement in a craft bakery, hotel kitchen, or food production facility, giving you real industry experience before you graduate.

Required Education

Entry to this programme typically requires a Leaving Certificate or equivalent, though many ETB colleges also accept applicants on the basis of relevant work experience or prior learning. There are no strict subject requirements, but background in Home Economics, Science, or Biology can be helpful. CAO points are not applicable here, as this is a further education and training (FET) course; you apply directly to the college or ETB. School leavers, career changers, and mature students are all welcome, and HEAR or DARE applicants should contact individual colleges regarding any supports available. Some providers may require an interview or a portfolio of relevant experience as part of the admissions process.

Core Subjects

Career Prospects

Employment prospects for qualified bakers and confectioners in Ireland are reasonably solid, with a consistent demand for skilled trades in hospitality, food retail, and food production. Craft bakeries have seen notable growth in recent years, particularly in urban areas, and many employers report difficulty filling skilled roles. Starting salaries typically range from around €26,000 to €32,000 gross per year, with experienced pastry chefs or head bakers in hotels and restaurants earning more. Self-employment and artisan market trading are also realistic options for entrepreneurially minded graduates.

Impact of AI on this program

AI has limited direct impact on the hands-on craft skills central to this programme, as baking relies heavily on tactile knowledge, sensory judgement, and manual dexterity. However, AI-driven inventory management, recipe scaling software, and automated production equipment are increasingly common in large-scale food manufacturing settings. Learning to work alongside these technologies may become more relevant if you progress into food production or management roles. The artisan and craft end of the bakery sector is largely insulated from automation due to its emphasis on handmade quality.
