The Craft Butcher Apprenticeship is an earn-and-learn programme where you train on the job with an employer while attending off-the-job training phases at a designated education provider. You develop hands-on skills in meat cutting, boning, trimming, portioning and product preparation across beef, pork, lamb and poultry. You also learn food safety, hygiene legislation compliance, stock management and customer service. A typical week involves working in a butcher shop, supermarket meat counter or food production facility, practising knife skills and learning how to prepare value-added products such as marinades and ready-meal cuts. By the end of the programme you hold a nationally recognised Advanced Certificate at NFQ Level 6.
Entry to the Craft Butcher Apprenticeship is employer-led: you must first secure a position with a registered SOLAS apprenticeship employer such as an independent butcher, supermarket chain or food manufacturer. There is no formal Leaving Certificate points requirement, but employers typically look for candidates who have completed the Leaving Certificate or Junior Cycle, with a good level of literacy and numeracy. Subjects such as Home Economics, Biology or Agricultural Science are useful but not mandatory. If you are a mature applicant (aged 23 or over) your work experience in food retail or production may be considered in lieu of formal qualifications. You must be at least 16 years of age and meet any food safety fitness-to-work requirements set by the employer.
Demand for skilled craft butchers in Ireland remains steady, as supermarkets, independent retailers and food manufacturers consistently report difficulty finding qualified tradespeople in this area. Completing a SOLAS apprenticeship gives you a recognised credential that distinguishes you in the labour market and supports progression to supervisory or management roles. Experienced craft butchers with strong product knowledge and customer service skills can command competitive salaries, with earnings typically ranging from around €30,000 to €45,000 gross per year depending on experience and employer. Self-employment and business ownership are realistic longer-term options for those who wish to open their own shop.
Artificial intelligence is beginning to influence the meat and food production sector through automated cutting and portioning machinery, predictive stock management systems and AI-driven quality inspection tools in large processing plants. However, the hands-on craft skills, customer interaction and sensory judgement required in a traditional butcher environment are difficult to automate fully, meaning skilled craft butchers remain in demand at retail level. You will likely use digital stock and ordering systems that incorporate data analytics, so a basic level of digital literacy is increasingly expected. Overall, AI is more likely to change how you work than to replace the craft itself.
Providers and indicative points are curated with AI support. Always double-check with the institution itself.
How to apply
This is an employer-led apprenticeship registered through SOLAS; applicants must first secure a contract with an approved employer (typically a butcher or meat retail business) who registers them with SOLAS via the Generation Apprenticeship portal. Off-the-job training is delivered at an Education and Training Board (ETB) centre, and there is no CAO application involved.
