As a Restaurant Manager you are responsible for the smooth day-to-day running of a restaurant, overseeing everything from staff rotas and food quality to customer experience and financial performance. You lead a team of front-of-house and kitchen staff, ensuring that service standards are consistently high and that health, hygiene, and safety regulations are met at all times. You monitor revenue, manage budgets, handle supplier relationships, and deal with any customer complaints or operational issues that arise during service. You work closely with head chefs, floor staff, and owners or senior management to plan menus, set pricing, and organise special events or promotions. Your role sits at the heart of the business, balancing people management, financial oversight, and the creation of a welcoming atmosphere for guests.
Listen: a day as a Restaurant Manager
You arrive at the restaurant at half eight in the morning, well before the lunch service begins. Your first task is to check the previous evening's till reports on the EPOS system, cross-referencing cash takings against card receipts and flagging any discrepancies for the owner. You also scan the reservations on the booking platform to see how many covers you are expecting at lunch and dinner, then adjust the floor plan accordingly. By nine o'clock you are walking the dining room and kitchen with a checklist, verifying that refrigeration temperatures have been logged correctly overnight and that HACCP records are up to date. Under Food Safety Authority of Ireland guidelines, these hygiene records are a legal requirement, and an unannounced Environmental Health Officer inspection can happen at any time. You spot that a reach-in fridge is running slightly warm and contact the maintenance contractor straight away.

Some videos were filmed in the UK. The work itself is the same, but the exams, qualifications and pay they mention are British — we include them so you get a feel for the job.
A Leaving Certificate with subjects such as Business, Home Economics, and languages is a useful foundation for entering restaurant and hospitality management. Many managers enter the industry through a QQI Level 5 or Level 6 PLC course in Hospitality Management or Catering Studies offered at Colleges of Further Education around the country. At degree level, a Level 8 Honours Bachelor in Hospitality Management or Tourism and Hospitality is available at institutions such as TU Dublin, ATU, MTU, and TUS, with entry through the CAO. The Hospitality Management apprenticeship, offered through SOLAS and higher education partners, provides an excellent earn-and-learn pathway at Level 6 or Level 7 for those already working in the sector. No specific statutory registration body governs restaurant managers, but food safety certification such as a HACCP qualification is typically required by employers, and managers are expected to comply with Food Safety Authority of Ireland regulations.
Most restaurant managers begin their careers in entry-level front-of-house roles such as waiting staff or bar staff, progressing to supervisory positions like floor supervisor or assistant manager after gaining experience. With several years of operational experience, often combined with a hospitality qualification, you can move into a full restaurant manager role, either within a chain or an independent establishment. From there, experienced managers may progress to multi-site or area management roles, or move into hotel food and beverage management within larger hospitality groups. Some experienced managers go on to open their own restaurants or consultancy businesses, drawing on their operational and financial expertise.
AI tools are increasingly being used in restaurant management for tasks such as demand forecasting, automated stock ordering, dynamic pricing, and analysing customer feedback data, reducing some administrative burden on managers. Reservation and table management platforms are becoming more sophisticated, using AI to optimise seating and reduce no-shows, meaning managers need to be comfortable working with these digital systems. However, the fundamentally people-centred nature of restaurant management — leading teams, resolving conflicts, and creating a welcoming atmosphere — means AI cannot replace the human judgement and interpersonal skills that define excellent management. Managers who embrace AI-assisted tools for scheduling, inventory, and marketing analytics are likely to work more efficiently and focus more energy on guest experience and team development.
