What does a Waiter/Waitress do?

As a waiter or waitress you serve food and drinks to customers in restaurants, hotels, cafés, bars and at events across Ireland. Your day involves setting tables, greeting guests, presenting menus, taking orders accurately and delivering dishes and beverages in a timely manner. You handle payments at the end of service, whether by cash, card or digital methods, and ensure the dining area remains clean and welcoming throughout your shift. You work closely with kitchen staff, bar staff and floor supervisors to make sure every guest has a positive experience. The role is fast-paced and demands constant attention to detail, especially when managing multiple tables or catering for large functions.

A Day in the Life

Listen: a day as a Waiter/Waitress

0:00 / 0:00

Your shift at a mid-sized restaurant in Cork city starts at 11:00. You clock in using the staff management system, check the reservation book with your floor supervisor, and learn that a table of fourteen is booked for 13:30. Before the doors open at 12:00, you polish cutlery, fold napkins, and lay up the tables according to the cover plan — making sure each place setting is correctly aligned and that condiment holders are full and clean. Guests begin arriving just after noon. You greet each party, show them to their table, hand over menus, and run through the day's specials as the kitchen printed them on the board. You take orders on a handheld PDA device that sends tickets directly to the kitchen printer, which helps avoid errors. Keeping track of three tables at once means memorising who ordered what and timing your trips to the kitchen so hot food arrives hot.

Filmed in the UK

Some videos were filmed in the UK. The work itself is the same, but the exams, qualifications and pay they mention are British — we include them so you get a feel for the job.

Required Education

No formal qualification is required to begin working as a waiter or waitress in Ireland, and many people enter the role straight from school or through part-time work. Leaving Certificate subjects such as Home Economics, Irish, French or Spanish can be helpful for understanding food culture and communicating with international guests. QQI Level 4 and Level 5 awards in Hospitality Operations or Bar Services, offered through Colleges of Further Education and ETBs, provide useful practical training and can improve your prospects. Some employers value certifications such as WSET (Wine & Spirit Education Trust) awards or a Safe Food Handling certificate. There is no statutory registration body for waiting staff, but reputable employers increasingly look for candidates who have completed a recognised QQI hospitality programme.

Required Skills

Career Perspective

Most people begin as a junior waiter or waitress on a part-time or full-time basis, often while still in school or shortly after. With experience, you can progress to senior waiting staff, head waiter or floor supervisor, taking on responsibility for training new staff and managing a section of the restaurant. Further progression can lead to roles such as restaurant manager, food and beverage manager or maître d', particularly in larger hotel groups or fine-dining establishments. Completing a QQI hospitality award or a higher-level degree in Hospitality Management through institutes such as TU Dublin, MTU or ATU can accelerate advancement into management positions.

AI Impact on the job

AI is beginning to influence certain elements of the hospitality industry, such as automated ordering systems, digital menus and AI-driven reservation management, but the core role of the waiter or waitress remains strongly human-centred. Guests continue to value warm, attentive personal service that technology cannot replicate, particularly in premium dining settings. Some venues are introducing tablet-based ordering or self-service kiosks in more casual settings, which may reduce the number of staff needed in budget restaurants over time. Overall, skilled waiting staff who offer genuine hospitality are unlikely to see their role significantly displaced by AI in the near future.
