What will you learn?

This QQI Level 5 programme gives you practical, hands-on training in the full range of butchery and meat processing skills. You will learn how to safely break down beef, lamb, pork and poultry carcasses, prepare cuts for retail and wholesale, and present products to a professional standard. The course covers food safety legislation, hygiene practice, cold chain management and the operation of specialist equipment such as band saws and slicing machines. You will also study meat science, including understanding the quality and composition of different cuts. A typical week combines workshop sessions on the cutting floor with classroom learning in food safety and business skills. Many programmes include a work placement in a craft butcher's shop or meat processing plant.

Required Education

Entry to this programme typically requires a Leaving Certificate or Junior Cycle qualification, though many ETBs consider applicants on the basis of relevant work experience rather than academic results alone. There are no strict subject requirements, but a background in Home Economics, Biology or Agricultural Science is useful. Mature applicants (23 and over) are welcome and may be assessed through interview or a skills demonstration. Some ETBs accept applicants directly from Youthreach or other further education programmes. You may also enter through an apprenticeship-style pathway by securing employment with a meat processor or craft butcher and combining on-the-job training with this award. HEAR and DARE access schemes do not typically apply at FET level, but ETBs have their own learner support services.

Career Prospects

Demand for skilled butchers in Ireland remains consistently strong, particularly as craft butchery and artisan meat products continue to grow in popularity with consumers. Qualified butchers are sought by both independent retailers and large supermarket chains such as Dunnes Stores and Supervalu, as well as export-focused meat processors. Graduates with HACCP and food safety certification are particularly valued by employers. Experienced butchers can progress into supervisory, quality assurance or procurement roles, and self-employment as a craft butcher is a realistic option.

Impact of AI on this program

AI and automation are increasingly used in large-scale meat processing plants for tasks such as portioning, grading and quality inspection using machine vision systems. However, the fine motor skills, judgement and customer interaction required in craft butchery are difficult to automate, meaning skilled butchers retain strong employment prospects. AI-driven inventory and ordering systems are also being adopted in retail settings. Overall, automation affects repetitive processing roles more than skilled craft butchery.
