What will you learn?

This QQI Level 6 Advanced Certificate in Professional Cookery gives you hands-on training in the full range of culinary skills expected in a professional kitchen. You will study larder work, pastry and confectionery, meat and fish preparation, sauce-making, and modern cooking techniques alongside essential food science and nutrition principles. A significant portion of your week is spent in a commercial-standard training kitchen, where you produce dishes to industry specification under timed conditions. You will also study food hygiene and safety legislation, including HACCP (Hazard Analysis and Critical Control Points), which is a legal requirement in Irish food businesses. Many programmes include a supervised work placement in a hotel, restaurant, or catering facility, giving you real experience working as part of a brigade.

Required Education

Entry typically requires a Leaving Certificate or equivalent, with most colleges asking for passes in at least five subjects including English or Irish. No specific Higher-level subjects are required, though home economics, biology, or science are useful preparation. Some ETB colleges also accept mature applicants (aged 23 or over) on the basis of relevant work experience or a portfolio interview, without formal Leaving Certificate requirements. School-leavers who completed a QQI Level 5 Hospitality or Catering award may also progress directly onto this Level 6 programme. HEAR and DARE access schemes may be available depending on the college; contact your local ETB or College of Further Education for details.

Career Prospects

Ireland's hospitality and food service industry continues to face significant chef shortages, meaning qualified graduates are in strong demand across the country. Starting salaries for a Commis Chef typically range from around €26,000 to €30,000 gross per year, rising considerably with experience and progression to senior kitchen roles. Chef de Partie and Sous Chef roles can command salaries of €32,000 to €45,000, with Head Chefs in established establishments earning more. The sector offers good geographic mobility, with opportunities in rural and urban settings alike.

Impact of AI on this program

AI is beginning to influence professional kitchens primarily in areas such as stock management, automated ordering systems, and predictive menu planning tools that analyse customer trends and reduce food waste. Robotics and automated food preparation equipment are being trialled in fast-food and high-volume catering environments, but the skilled craft element of professional cookery remains difficult to automate. For trained chefs, AI tools are more likely to assist with kitchen administration and cost control than to replace hands-on culinary expertise. Staying current with food technology trends will be an advantage throughout your career.
